The word llagar names both the traditional press and the production space. This double meaning summarizes its importance: it is a machine and a place, but also a network of knowledge and relationships around the harvest.

Receive a different harvest every year

The winery evaluates ripening, health and origin of the apple. Decides on blends and pressing rates, organizes warehouses and maintains traceability. The annual variation forces us to combine sensory experience with technical analysis.

Custody knowledge

Much of the craft was passed down within families and groups: recognizing varieties, reading a fermentation, listening to a barrel or deciding on a racking. Today oenology, microbiology and quality control dialogue with that accumulated learning.

Sustain local landscape and economy

Each apple purchase connects the winery with pumaradas and small farms. When origin and quality are remunerated, the crop has a better chance of being maintained and with it an agricultural landscape that needs pruning, mowing, replacing trees and harvesting.

Visits, espichas and tastings turn the place of production into a cultural space. Seeing the press, smelling the winery and talking to the person who makes it allows us to understand that a bottle is not born in an abstract line, but in a chain of human decisions.
